
It may sound wierd to you, but try it before you reject it.
Ingredient amounts are only suggestive. If you like something, put more of it in!
Step 1.
Take about 1.5 to 2 pounds of ground beef or chili meat and brown it in a large electric pan.
Drain, and place back into the pan with
a teaspoon of Kosher salt,
four (or more) crushed large cloves of garlic
a whole chopped med onion or 1/2 of a large onion
two strips of uncooked bacon
Continue cooking the mixture on med heat until the bacon, onions and garlic are well cooked and integrated into the dish.
Once the bacon is cooked remove it from the chili and feed it to the dog. If you don’t have a dog, get one.
Step II
Once the meat is well browned to your satisfaction turn the temperature to medium low heat and add
two 14 oz. cans of undrained whole tomatoes that have been pulsed a few times in a food processor, and
3 to 4 cups of undrained Dark Red Kidney beans.
Once those are well heated and simmering add the following to the mixture:
1 TBSP of sugar
1 to 2 TBSP of dark molasses
1 to 2 TBSP (or more) of peanut butter
1/4 to 1/2 tsp of ground cloves (look out, this is a great part of the recipe, but easy to overdo. I recommend that you try a little -1/4- and taste, and proceed with caution. Your forbearance will be rewarded with a super good tasting and unique chili sauce.)
2 or more TBSP of chili powder
1 TBSP of your favorite curry powder
Optional:
I TBSP of unsweetened chocolate or 1/2 to a full bar of bitter sweet chocolate, according to your taste..
If you like peanut butter and want the peanuts to be prominent add it quite late in the cooking process, otherwise it will integrate with all the other flavors and be harder to distinguish. If you don’t like peanuts or can’t eat peanuts you could substitute Cashew butter, but frankly, the truth is you might as well end it all now, because life is not worth living without peanut butter.
Once all the ingredients have been added reduce the temperature to simmer and continue cooking until the chili reaches the degree of thickness you desire. Once the texture is what you want cut heat and immediately cover to prevent further reduction.
Whip out a bowl, dip the chili and enjoy! You can also add the chili to a bowl with a mound of mashed potatos in the center, or in a bowl half filled with angel hair pasta: chili mac supreme.
